• 2 Red Drum fillets
  • 1 Tablespoon Paprika
  • 3/4 teaspoon Garlic Powder
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 fresh ground black pepper
  • 1 pinch cayenne pepper
  • 2 teaspoons olive oil
  • lemon wedge


In a small bowl, combine paprika, garlic powder, thyme, salt, pepper, cayenne and oil to make a paste.  Rinse and pat fish dry with paper towels.  Using the back of a spoon, rub the paste mixture evenly over both sides of the fish.  Cover with plastic wrap and refrigerate for 2 hours.  Preheat BBQ grill to medium high and grease grill.  BBQ, turning once (about 3-5 minutes per side).  Alternatively you can cook in a non-stick frying pan over medium high heat.  Cooking time will vary depending on thickness of fish.  Remove to plate and serve with lemon wedges.
