Sexy Fish – Grey Tilefish

Our Sexy Fish this week is the Grey Tilefish.  They live in the deep cold waters along the continental shelf.  Because they hide in underwater canyons, they weren’t discovered until 1879.  Tilefish are colorful fish with yellow spots, big heads, and big eyes.  The ones that live in the deepest water feed on crustaceans, which give tilefish a mild flavor that has been compared to lobster or scallops.
